Materials
1 pack of pasta (preferably handmade)
1 tablespoon butter
1 tablespoon olive oil
5-6 leaves of dried tomatoes
1 large tomato
1 sprig of fresh basil
Sea salt, freshly ground black pepper
Fabrication
When you start preparing pasta with dried tomatoes and eggplant, first peel the fresh eggplant, chop it into small pieces and soak it in cold water with salt added. Then drain the eggplant and dry it thoroughly with a paper towel. Cook the eggplants in olive oil until they soften. Add diced dried tomatoes and grated tomatoes. Cook for a few more minutes and remove from the stove. Add very finely chopped fresh basil, freshly ground sea salt and black pepper and season to taste. Your dried tomato and eggplant pasta sauce is ready. Boil the pasta in boiling water with added salt for a maximum of 8 minutes. Drain and season with butter and the sauce you prepared beforehand. Optionally, you can decorate the dried tomato and eggplant pasta with parmesan cheese and have it ready to serve. Enjoy your meal.
